Roasted Rosemary Potatoes with Olive Oil

Ingredients:

1 pound of baby potatoes
2 tablespoons of olive oil
2 teaspoons of fresh rosemary, chopped
Salt and pepper, to taste
Instructions:

Preheat your oven to 400°F.

Wash and dry the baby potatoes.

Cut them into halves or quarters, depending on their size.

In a mixing bowl, add the potatoes, olive oil, chopped rosemary, salt, and pepper. Toss everything together to coat the potatoes evenly.

Arrange the potatoes in a single layer on a baking sheet. Make sure they are not too close together.

Roast the potatoes in the preheated oven for 20-25 minutes, or until they are tender and golden brown.

Remove from the oven and let them cool for a few minutes before serving.
